Well first you need to figure out what consistency you like your oats. You can have crunchy chewy and mushy depending on the thinness of the oat and how long it was soaked/cooked. Then you need to figure out what you want in it, and if you want it in before or after cooking.

For hardness it goes:
Steel cut/Irish oats
Stone Ground/Scottish oats
Old-fashioned/Rolled oats
Quick cooking oats
Instant oats

My "perfect bowl" is simple old-fashioned oats with a couple medjool dates soaked long enough for the dates to replump, with a dash of nutmeg and cinnamon. The dates mash in and give it the perfect level of sweetness, for me.

2 tbsp cocao powder
3/4 cup milk
1tbsp maple syrup
Mix cocoa powder and oatmeal, pour milk in, stir and microwave for 1:30, stir again and microwave another 1:30. Pour in maple syrup, 1 final stir and done. You can also add peanut butter, it's fucking god tier

Cooked in milk with salt and walnuts. If I add sugar to oatmeal, either a small amount leaves it still tasting bland or enough to make it taste good means I get sick of the sugar before I'm actually full. The walnuts give it more flavor and texture and it does actually taste good with only salt. It probably sounds unappetizing and weird to people who are used to eating it with sugar but I prefer it that way.
