Chang here. In my dealings with the white, I've noticed that they are particularly sensitive to food texture, even moreso than flavour.

One of my favorite dishes growing up is yuan xiao, a gooey wonton like desert that has a filling typically of sweet black sesame paste or sweet red bean paste. If this dish were deep fried or otherwise crispy/crunchy in some way, I guarantee the white would love it. However, on more than one occasion when I shared it with the white, they remarked that it had the texture of "snot" and couldn't even swallow it.

Don't know why the white is so hung up on texture. In Chinese cuisine, there are a lot of dishes with a "snot-like" texture and it's just one of the many types of texture that adds variety and complexity to a dish. I guess the white ate more boogers when they were kids or something and the texture reminds them of a shameful past.

Gelatinous, chewy or slimy food is just not that appealing to us.

It's not because western people care about texture, and Chinese don't though. Chinese people deliberately seek out those textures. They're equally sensitive to food texture, if not more so, it's just more often a positive reaction.

This. I am white and so are my s/o and friends, but when we go to a Chinese restaurant and I'm slurping down duck tongue and gnawing on pig ears they just can't get into it. For every soft thing there must be crunch (chips, quiche), for every chew there must be "yield" (Al dente, omelette), slippery textures must be blended with rough (scrambled eggs on toast). This "balanced" approach to texture is narrow, but I think it has merit in the same way a musician wouldn't just randomly start plucking strings; he more likely plays chords. Euros like food texture to be like "chords", and chords sound great. One exception might be dessert and I don't know why.
