the trick with all steak is to bring the temperature up slowly, 250 in the oven, then at the very end you crank the heat up on the range, season and sear the shit out of it in a fat, flipping every 15 seconds or so until its dark and crusty

this is of course in direct opposition to chicken and fish where you should go high and fast, 425 for about 15 minutes

Cook the steak in the oven until it hits 120 or 115, let rest on a sheet pan in aluminum foil for like 5 minutes or less. Put the sweet juices from the foil in the pan along with some herbed butter (Just butter with herbs in it put a generous amount in) Char to perfection and cook to a desired temperature making sure you are spooning butter over the steak constantly (basting) enjoy!
