Why does Pastel de nata (Portuguese custard tart) taste like sweet potatoes when there's no sweet potato in them, just egg, flour, milk, sugar, and vanilla extract?

They don't taste like sweet potatoes at all. But if you bake your sweet potatoes with marshmallows the caramelization on the top of each would have a similar flavor.
