Cast iron is only good for two things. Searing food and cooking it fast, and cooking directly over open flame.

Otherwise it's just a pompous look at me piece of hardware if you use it for things like eggs and shit.
Although, some cookware is cast iron its coated with non stick stuff which is good
To best clean an exposed cast iron cookware all you need it hot water, steel wool and if need be a bit of soap.
But, in order for you have a decent cast iron skillet it needs to be used often otherwise it'll become sticky and oils you seasoned it with will become rancid.

>> No.11494070

A number of things she says are wrong. The thing that bugs me the most is her talking like if you let water touch it, it'll turn into a pile of rust. That's bullshit. I don't use soap very often on mine unless I have some truly sticky shit stuck in there, but you can put a bit of water and a brillo or scotchbrite to work on one of these, no problem.

When you're done cleaning the thing, just turn your cook surface back on medium heat, start a 10 min timer, and then come take it off when it goes off. The water cooks off of it, and the rust never happens. Every so often, ill wipe it down with oil and put it back on the heat until you get a bit of smoke. I use flaxseed oil.

This shit's not rocket science. Do it, or don't.

>Is cast iron porous?
No. It does not have pores. It has shallow indentations left over from the casting process. These do not expand, contract, or seal themselves. These indentations should be properly seasoned though, you don't want the deeper ones to become sources of rust.

>to soap or not to soap?
This depends on the soap you're using and whether or not your pan is properly seasoned. Personally, I would stay away from soap unless it is necessary. There are too many factors to give a one size fits all answer.

>should I oil my cast iron after I clean it and before storing?
Sure. It won't hurt, but it won't likely help unless your seasoning is inadequate and you store your pans in a humid environment.

Cast iron is dope. A lot of the do's and don'ts are a matter of tradition or personal opinion. At the end of the day you're the one cooking. As long as your cast iron does its job then who gives a fuck if you oil it too much or too little, if you use soap or not, etc.

Cast Iron isn't the ultimate kitchen tool. Nothing is. There are situations where cast iron will outperform other things, and vice versa. Just chill the fuck out and cook some good food.

I use a little bit of everything in my kitchen. I have cast iron, carbon steel, cheap Teflon bullshit, etc. It all works. The mark of a good cook is their ability to turn shit into gold.

It doesn't matter how healthy the lipid is, really, as it's going to be polymerized by extreme heat into a plastic-like coating. Use flaxseed oil, it has a very high smoke point. You can use regular vegetable oil, or even olive oil.

Use a paper towel to apply the oil of your choice. It only needs to be on the cooking surface. You don't need to bother with the handle/underside. Wipe off the excess. Put the skillet face down into a 500 degree oven. It will begin to smoke. THIS WILL STINK. It will smell like something is burning and will likely set of your smoke alarm. After it has smoked for a minute or two turn the oven off and let the pan cool.

Reapply oil with a paper towel. Wipe off the excess (too much oil will create high/low spots on the pan, which collect food debris and are harder to clean). Put it back in the oven at 500. Repeat the process.

Do this about seven times. Now your pan is seasoned. You can cook a steak or chicken or vegetables or whatever on it. Clean it by scraping and scrubbing with a plastic/nylon brush under very hot water. Wipe dry. You don't have to oil it, but you can if you like. It'll look like a black mirror.

Use only wooden utensils. NEVER use a knife on your skillet. Use stainless tongs carefully.

oh, yeah. you always need to cook with some kind of lipid when using a skillet. typically i use butter. but you can use whatever you like no matter what you used to season. the coating is just a plastic-like layer that protects the iron surface from rust, and from collecting all the crap that lies in a pan after use.

I've been making sort of a roasted veggies / hash thing in my cast iron this week and it's a new staple.

- sweat onion / shallot / garlic / a hot pepper on stove
- add bite-sized sweet potato, small potato, mushrooms, carrots, beets, saeurkraut, whatever, all tossed in oilve oil
- season with salt, pepper, whatever else if u want
- bake at 425 for about 25 minutes. gonna try 450 for 20 next time
- take pan out, make a little well and break 2 eggs. Put a bit of whatever cheese on some of the veggies
- broil until the eggs are cooked. maybe 2-4 minutes
