I’m from San Diego CA and I don’t think anyone here really thinks that, but there are stupid people everywhere. I’ve never had Mexican from NYC although I’ve been there once.

There is a huge crossover bleed between Southern California Mexican cuisine and food actual Mexicans in Tijuana eat. People have this misconception that as soon as you step over the border the food is suddenly 100% authentic. I think the closer you get to the border the more “authentic” it becomes. The food in Mexico City is a lot different from the food in TJ. At least in my experience.

True, but there is a real issue behind it. When a cuisine becomes popular it the US it gets changed quite a bit to reflect American taste. We've seen it with Chinese, Italian, Mexican, Greek and Japanese food. When an American wants to distinguish between the American styles of these cuisines and the regional styles in their country of origin the word "authentic" gets tossed around. It's a poor word choice, as Southern CA Mexican is authentically its own thing, even though it has a lot of overlap with the regional Mexican food just over the border. It's still pretty different from the food you'd find in CDMX, Puebla or Oaxaca. Just like Italian American food is different from what you'd find in Naples or Sicily. "Authentic" is a poor word to describe this, but a lot of the time it's shorthand for "not what you get at Taco Bell or the Olive Garden", meaning not the Americanized version of this cuisine.

Goat is looked down on as poverty food in CDMX, and most of the time sheep are used. I was talking about this with a goat farmer down there a month or so ago. He has trouble selling goats for meat - he makes his money from the milk and milk products. Most of the barbacoa eaten in Mexico City comes from sheep raised in Hidalgo, that are then trucked down to Capulhuac where they are butchered, cooked and sold in the city on the weekend.

I was down in Mexico back in August and they had this everywhere. I thought it was wierd, didn't like it.
Enchiladas or chicken in pipian sauce was amazing, had some good moles, actually almost everything I had was delicious. Elotes is a very very basic and delicious Mexican dish, but the sauce you make for it is incredibly underrated. One of the best things I ever cooked was fish tacos with elote sauce:

>saute some white fish. set aside
>make pico de gallo
>>cilantro, diced fresh tomato, diced white onion, 1 clove minced garlic, lime juice, salt, pepper, 1/4 tsp sugar
>sliced avocado (optional)
>make elote sauce
>>1 part sour cream, 1 part mayonnaise, lemon juice, diced cilantro, paprika and cayenne pepper powder (make it speckley red and spicy to taste)
>fry corn tortilla in a very hot skillet with corn oil
>assemble taco

Note: cilantro = coriander herb for all of you living outside USA and Latin America

Pork Tamales with green sauce. But I have to monitor and regulate my aunt because she always fucks up the sauce and chooses the least spicy siranos possible.

A medium-cheddar Quesadilla with sour cream, green onion, and some habanero bits makes for a okay snack as well I suppose.
