They add citric acid or something to stop the garlic from causing botulism, so unless you're adding the garlic to something equally acidic, you'll be able to notice the difference.

Even as a kid I loved fresh garlic, but one time when we were making pizza this was all we had. I remember biting into the garlic and thinking the pizza was spoiled and not wanting to eat it.
