Which region of China do you think has the best food?

What are some noteworthy differences between the regions?

The Chinese have really good food, especially the southern regions, but they really need to learn presentation. 99% of Chinese, even proper chefs have no idea on how to debone a fish,duck or chicken. Don't expect them to remove shrimp veins or tails. Don't expect them to remove the shell of a crab

They just take their stupid cleaver and hack it into bits leaving you with fragments of bone, cartilage and fat that you are encouraged to swallow whole then spit out like some fucking chipmunk. No thank you.

For that reason my answer is Taiwan since they are slightly more civilized that mainlanders -- but really I'd be eating non-bone dish like pic related or at a foreign place like Thai or Japanese where they have proper instruction.

come to think of it I agree partially. I got roast duck from a Chinese spot in Manhattan Chinatown (I believe it's Cantonese run) and it was way too boney for my liking. Most Chinese stuff I get is boneless anyway, though.

I am biased because I spent most of my time in Guangzhou, and most of the Chinese immigrants to my country are from the south or HK.

China is a big place, so I'm only familiar with a few regions. I know they eat a bunch of weird shit in the west with the Uyghurs and there are poor regions in the north bordering Mongolia where food is considered inedible.

And yes the veins are their poop chute. It's frustrating because their food tastes great, they just need to work on refining the techniques a bit.

I think Cantonese people make up most of the overseas Chinese population.

It seems like many poor parts of China have good food, though. Perhaps poverty + bad weather/isolation in certain areas leads to subpar cuisine.

And yeah, that's what I thought so I don't really trust shrimp from Chinese places for that reason. I stick with pork, chicken, beef, and boneless fish
