the human stomach is generally considered to hold approximately 1.5L of food on average
obviously this varies greatly from person to person and from what I can tell the general consensus on the internet is MAX capacity is around 3-4 liters
81FL OZ comes out to 2.39L
so I would say it is technically possible for a person with above average stomach capacity and enough preparation to eat 50 hardboiled eggs in an hour

also, joey chestnut ate 141 hardboiled eggs in 10 minutes in 2013
