The original experiments on saturated fats replaced saturated animal fats with unsaturated plant oils and showed a reduction in total cholesterol levels. At the time the original veggie oil experiments were done we couldn't measure cholesterol fractions, much less know which ones were good or bad. Eventually somebody noticed that this experiment was actually changing two variables, and repeated it but this time simply removed the saturated fat from the diet of the experimental subjects, and found no significant change in total cholesterol levels or the LDL:HDL ratio. Eventually experiments determined that the reduction in total cholesterol occurred because the vegetable oil used in the original experiment has significant amounts of naturally occurring stearic acid (so those experiments were actually changing 3 variables), and while stearic acid lowers total cholesterol it actually increases the amount of bad LDL cholesterol and decreased the amount of good HDL cholesterol.

The original experiments were done on chickens and rabbits, but once they tested this hypothesis on humans it fell apart. What they found is the human body can make about 70% of the cholesterol it needs, if you eat any cholesterol e.g. eggs then your cholesterol levels will rise to their normal levels and if you keep eating even more cholesterol then your liver will reduce the amount of cholesterol it makes so the cholesterol levels dont really rise any more. The guy in the article linked below ate 25 eggs every day and had normal cholesterol.
