I assume it must be different from american mayo because I tried that with friends and nearly gagged.

I don't really enjoy mayonnaise. I can tolerate it somewhat but I prefer honey mustard or ketchup generally. Spicy peanut sauce is also great with fries. I like yogurt sauce too but mayo is just vaguely offputting to me. Especially cheap commercial varieties.

Here's my chimichurri recipe I got from The Food Lab cookbook:

1/4 cup chopped parsley
1/4 cup chopped cilantro
2 teaspoons minced fresh oregano
4 cloves of garlic minced
1/2 teaspoon red pepper flakes
1/4 cup red wine vinegar
1/2 cup evoo
salt to taste

Just whisk it all together and let sit at room temp for an hour before serving
