Why doesn't McDonald's take the chicken patty out of the McChicken and market them as XXL McNuggets? Who wouldn't want a 10 piece XXL McNugget meal?

If you scale up an object it's volume will grow faster than its surface area.

Imagine a cube:
SA = (L^2)*6
V = L^3
Or even a sphere:
SA = 4*pi*r^2
V = (4/3)*pi*r^3

When objects are small, SA is larger but V grows more quickly.

Or to think about it in a possibly more intuitive way:
Cut the chicken in half, the volume will remain the same but its SA has increased.

When anon said people want the SA, he is saying they want fried breading more than chicken breast.
