Spain is a little too high, should be the same as Italy or even lower, despite your hot opinion Italian food did change the staple diet and food culture on the entire west, which Spanish, for all its flavor, still hasn't. Spanish food is good, but nothing incredible. In fact it's rather simple stuff, just lots of fresh ingredients, olive oil, seafood, that kind of stuff.
For example, paella is just a sort of seafood risotto with saffron and other spices depending on variety.
Tapas is a massive meme, again not bad, just nothing all that special, it's usually just finger food of various kinds. Traditional tapas are rather boring: Croquetas (breaded dough made with stock and ham usually, or other contents), Tortilla (omelette with potatoes and sometimes onion), cured ham, olives, shrimps in oil with garlic, anchovies in oil or in vinegar (boquerones), clams either steamed or in sauce, tuna patties (empanadas, but the argentinian type are better), and ensaladilla rusa (glorified tuna salad with more veggies) are the most common types. Also generally just cured meats and cheese.

One of my fav spanish dishes is galician-style octopus, which is also very simple, just grilled octopus cut into little bites, with olive oil, thick salt and paprika seasoning. Again, very simple concept, although needs to be done well. Pic related

Spanish cuisine generallt thrives on simplicity. And it's all very good, don't get me wrong. It's just not an amazing unforgettable taste. I much more miss mexican junk food like tacos al pastor and tortas and that stuff, now that's a taste you can't get anywhere else.

However I wouldnt say that there is one "Spanish cuisine", Galician food has nothing to do with food from Almeria, for example, even if both feature a lot of seafood.

Also croquetas arent made of "dough", its basically thick bechamel. But anyway, yeah, its still a good generalization to say that "spanish food" is simple but needs to be done correctly.
