“Authentic” food is often mot authentic, or exists in a disadvantaged state.

For example, cooking authentic Italian food in the US is never going to be a one to one comparison even if you manage to get the correct ingredients, because anything gathered locally will have probably be of lower quality, or at least one that doesn’t quite match.

There is also just slapping authentic on things for marketability, but being lazy instead of really doing it right.

The way I see it, traditional recipes have evolved over a long time and settled on something that is better than the obvious alternatives.

For an example, in China they have some kind of batter made from various grains, which they cook like a crepe and then spread a bean paste and add spring onions. The end result is great but no one person would have thought of this, it just evolved over time.

Now the "authentic" pizza and regular pizza are both recipes that evolved over time so you can take your pick. But I like to try the "authentic" recipes just to see what they are like.

It's a fucking bitch to get the olive oil you want in the US. You can get quality now, but there's both shit and oils from so many different countries that it's fucking flooded. So much garbage, so many countries, so many locations, dear god. Sicily is the goddamn worst.
