This might be a really stupid question, but:
How do judges (or food critics) judge food accurately if they're served something they don't personally like? I've been watching some MasterChef-type shows and this has been making me curious because of all the weird ingredients they use. Am I expected to believe that these judges have such refined palettes that there is no food they can't judge?

For instance if someone serves me a beautiful plate of food to judge, but it has chick peas on it, it will be fucking disgusting to me. No matter what else is on the plate, if I have to eat chick peas I will hate the dish. Can they really be 100% objective and abandon their personal preferences when tasting food?

Hopefully that explained my dumb question well enough.

Generally the type of person who becomes a food critic is the type of person who wont scoff at a particular ingredient.

Is that even genuinely possible (legitimate question)? I assume everyone has something they just plain don't like. Maybe not broad strokes like people who refuse to eat any seafood, but surely there's got to be something to everyone that they find gnarly?

They're eating testicles and tongues and snails and whatever else. There's got to be one guy on there who is looking at the dishes like "ugh it's fucking blueberries I can't stand blueberries".

It's part of the job description. Yeah, people are gonna have their likes and their dislikes, but if your job is critically reviewing various dishes you're not going to be a picky eater unless you're working for a publication that's all about people with gluten allergies or something.
