I think their sensory system is really different from higher animals. With a shot heart, you will in most cases be able to perceive a lot until your brain dies off from lack of circulation and oxygen. I'm not so sure about northern style (my family is from the south), but usually you boil the pork to pull out blood and any remaining blood proteins; fried to help seal the "shape" of the pork so it doesn't disintegrate during the long steaming process.

i think the extra boiling process is to help render down some of the pork fat so that during the steam process there wouldn't be a whole pool of rendered pork fat at the bottom of the bowl.
