I think prioritizing appearance of a dish over actual taste is something associated with the consumerist ethic all over the world. If you think about it, most traditional foods that taste good don't really look that pretty - like goulash, or authentic pasta, or hummous, or authentic homemade Asian curries. It's only restaurants and eateries that try to make food pretty to catch people's attention.

There is a lot of truth in this, and I say this as a former alckie. Most beer does taste good, especially summer ales and orange/grapefruit beers because they don't taste like alcohol. But liquor is nasty. I've had 20 year old wine and top shelf scotch at a friend's wedding. The scotch tasted like the whiskey I get for $10 that comes in a plastic jug. I'd say you can taste the difference with bottom shelf stuff in wine when used to cook. If you use a cheap shitty bottle of wine in your food then you're bound to not have as rich of a flavour and get some off vinegary notes. And the same with spirits when mixed, Jack Daniels with Coke for instance tastes distinctly nicer than with some cheap scotch.

When it comes to drinking spirits nest though, I agree with you and I have a hard time imagining anybody legitimately liking them. They taste like toxic waste unless mixed, just bitterness and chemical burn.

That's actually not correct. Originally the rice was used to preserve the fish but was so foul it wasn't eaten at all, only the fish was eaten. The rolls only came like 1000 later with the discovery of vinegar which allowed for the rice to be edible as well. Regardless the original variant was named in regard to the preservation of the fish, where as now sushi may not even be an appropriate word as there's no form of fermentation or what have you in most sushi.
