That would be tough. You don't want your oil mixed with those different things. Space is a big thing for cooking out of a truck. I'd stick to a couple things you do really well. For Portland, vegans and veggie people are prevalent. I'd probably do a salad or stir fry. Or maybe some weird quinoa paninis. Charge twice as much and say it's organic.

Fresh pan pizzas mad in a carbon steel pan.

Kinda considering it actually. I have some /g/ skills so I'd make a raspberry pi controller drive-thru kinda thing too. I can make the pizzas in 4 minutes since they're thin and cook at high temperatures. Basically order your za in the drive-thru, park in the lot, then when the screen in the front of the truck displays your order you pick it up, or the cook could bring it out like a drive-in.

The dough is really easy to make a lot of, and I cold ferment it for up to 5 days. So basically I'd age the dough, use it on day 3, use leftovers on day 4. I'd never run out of dough. It's not even something I'd need to automate.

I can make an automatic sauce thing easily enough. And the toppings would all be fine in those restaurant warmed food containers. Really as I type this it doesn't seem like much effort at all.

Menu is margherita, spinach and artichoke, and a italian salami pizza. And a dessert pizza, probably just nutella or something similarly low-effort. Maybe a tarte tatin. $10 a pie. Might find a way to sell halfs for $5. I'd have to get a gas or propane powered oven that can go over 500F and won't explode.

There's only really 2 problems:
1. I'm required to have a sink on premises right? How the fuck?
2. How to sell halfs? Force people to wait until someone shows up who also wants a half? I don't want to sell pizza that's been sitting there for more than a few minutes. Maybe I just won't sell halfs but then I'd need a smaller size for singles.
