Sup /ck/ how y’all doin. So I’ve been saving all this pickle juice so I can make pickle-brines fried chicken, but now my gf is on a diet and can’t have fried foods. Is there something else I can do with all this pickle brine? Don’t want to just throw it away.

Just grill it or roast it you idiot

the brine is still going to improve chicken.
Get a whole bird, break it down, thighs, drums, breasts, wings
save the carcass to make a stock, and the bones from later
brine the pieces overnight
air-dry them on racks for a couple hours in the fridge, you can use a hairdryer to speed up this process, then you get crispy skin
coat them in oil & pepper
grill them
pay special attention to the breasts, you have to time those right, if you go under, just put it back on later

slice the breasts up, and give that to your girlfriend. Even though you used oil, it won't have penetrated the breast, and it will be very low fat. You get the tastier fattier thighs.

A nice no-fat dipping sauce is fish sauce, lime juice, minced chilli, minced garlic, and minced cilantro. That's classical thai, and 0 fat.

The pickle brine will make a big difference still, although just dry brining is what i usually do. You could even just pickle brine a whole bird and just roast it. Just still do the airdrying step so the skin is good.

I honestly prefer decent grilled chicken, to fried

another thing you can do, is reduce soy sauce + sake + mirin + sugar, maybe some slices of ginger, until it's a bit sticky, and make a tare sauce, also 0 fat, and brush that on your chicken just before it's done.

But I honestly prefer just plain, and that's still what top tier yakitori restaurants will mostly serve. Plus a tare sauce makes more of a mess on your grill. It is good though.

I have personally pickle brined grilled and roasted chicken several times. It is definitely a good thing to do. You just have to air dry it as well so you get crispy skin.

Also if your girlfriend can only eat lean meat, breaking down a chicken is going to be better for her, because grilled chicken breast you can actually time right and not overcook, whereas roast chicken breast, while good, is hard to not overcook, atleast a bit, because the thighs and drums need longer.

You can still brine it, and shake n bake style bread it while moist, just keep the oil minimal when you bake it. Baked chicken with a little breadcrumb crunch on top isn't going to break the grease issues. If you keep on the skin and bone, she can tear off the skin and just have it that way.

Hit hot, drained, boiled chunks or new potatoes with pickle juice when hot, just before making potato salad. Potatoes suck up stock, and any kind of liquid best when hot. Your choice to make it hot and tangy german style with a little brown sugar, a few bacon bits...or a creamy mayo salad...or my favorite, a bit of whole green beans, baby reds, red onion slices, hard boiled eggs, very light dijon-pickle juice-mayo kind of vinaigrette. Bit of thyme or tarragon, or basil. Sometimes I use coarse mustard. Pickled mushrooms are nice too in there. Best cold, I think, with a nice cold beer.
