I'm all out of bread, so it's time to make some more, and I decided to actually take pictures of the process this time, for a cook along or something.
I'll post the batch size for 2Kg of dough, if you want the formula, I have it in a spreadsheet with adjustable batch sizes, posted here, I'll be more specific when I get to the steps.

1/16 tsp. yeast
Mix and let sit overnight, or in the fridge for up to 3 days

LEVAIN
242g Starter
167g Water (tepid)
242g Bread Flour
Same as the poolish

Add
444g Bread Flour
121g Whole Wheat
348g Water (tepid)
20g salt
~2tsp. Yeast
Knead, Rest until almost doubled, "Punch Down", shape, and bake at 475f in a WELL STEAMED OVEN (I cannot stress how important this is) until internal temp is 200f. let rest for 15-30 minutes.

My gf bought a wok at target because she thought it was cute, so I rinsed it off and used it. I don't know if it's any good, but I started my onions in it.

Bacon is done, I removed it as well as most of the fat, and added my slivered garlic to it to toast with the remaining bacon grease. This will be a topping.
