According to simulation theory, water takes longer to boil while you watch it because it takes more processing power to keep the pot, water, and heat source active and modeled. It disappears when it's outside of everyone's field of view, and the view of cameras. Thus since the computer running the simulation of our universe requires less processing time to increase the temperature if a non-watched pot, it boils considerably faster.
