I understand that complaint. It’s a meal I make that is essentially a sunny side up egg, pinto beans, cheese, and hot sauce in a tortilla. It’s filling, high protein, carbs for energy for my job, I like it. The egg’s the center of attention but this meal worka great pre-work for me and it’s fast.

If it’s just egg and tortilla then that’s nonsense. But an egg over easy with other ingredients included makes the egg develop a nice almost sauce-like umami addition as it spreads across the taco. You gotta do it right but it can certainly work. Also

i learned this from my grandfather who cooked at a restaurant. he uses lots of cooking oil to make the most perfect sunny side up. using a spatula to baste the top of the egg repeatedly until the white turns opaque but the yolk still soupy inside. then lets the egg rest on paper towel to soak up the oil before serving. try it. its tastier than poached egg and quicker to prepare.
