It's not. There's several good NHK documentaries on YT about Tsukiji that actually go into the aging process. They follow along some guys in the Tuna business and show how they buy the fish at auction, butcher it, then age the different cuts at different times and temps. Bourdain discusses this in several of his episodes as well. Off the top of my head I know the Croatian Coast episode of No Reservations goes into it.
