I mean, I've cooked a small lamb roast before, but not in the toaster oven.
Can't even fit the vegetables and the meat in there at the same time. There's going to be a little juggling with the trays and pans going on to get everything done around the same time.

Meat resting. Internal temp. was 65 C when I took it out.
Mushrooms sweating nicely so I'm leaving the sauce a little thick in anticipation of extra liquid from them at the end.
Sauce is just the liquid from the vegetables and meat trays turned into a roux and then thinned with water. Didn't have any milk and I don't think I need it anyway.
Added some more tarragon as well.
I really hate this tiny kitchen.

I trusted the broiler in my old oven because it was a proper fullsized one with a fan and whatnot.
I'm still getting used to the toaster oven, which functions differently.

And that's not a nonstick pan. It's carbon steel and I used that specifically because I did make an autist cry about nonstick in the last thread. I figure his life is miserable enough without me bullying him.

I ended up with way too much sauce. Maybe I'll mix the rest with some shredded cheese and pour it over some sliced potatoes and put that in the oven tomorrow. I'm trying to do fewer stews.

Your mash looks like it came from your mother as an afterbirth. I'd say that you should always try to aim for cooking a produce to your vision; mash would fit one of two categories:
1. Super fine mash, i.e. a purée. No lumps whatsoever, smooth as fuck.
2. Lumpy, but sticking together. Basically boiled potatoes, then giving them a rough pounding and using a slight bit of cream to bind it, and then season with salt and chives.
Also, when constructing a dish, try to think of it in terms of 3 or 4 flavour components. In this case it's meat, potatoes and...? You would ideally need some acidity to cut through the meaty flavour and fat/carbs in the potatoes, and a crunchy texture as well, since both mash and potatoes are very easy on the palate. Fried kale or cavolo nero are excellent choices for this to meat. For acidity, I would advice a red wine sauce or jus.

Happy to help. I'm trying to be more active here on /ck/ to give random advice. In general, I'd say that I've learned the most from actually visiting quality restaurants. A good way to start is to find a Bib Gourmand or a 1-star Michelin restaurant and order a small menu (degustation or 3-course a la carte), with non-alcoholic drinks. The level of cooking usually is inspiring, and you get a feel for how meat should be cooked, and the overall level of composition, plating, etc.
If you actually have the cash, then try out a 3-star after a couple of 1-star restaurant visits. You should be impressed afterwards (but whatever you do, stay away from the wine pairing, and go with the juice pairing instead)

What's everyone cooking for dinner tonight? Made steaks, pic related. Pretty perfect rare inside. Just seared for 2 mins on each side flipping every minute (first time we made it this way, usually we flip only once.). Rosemary, garlic and butter baste at the end. Side of sauteed asparagus. Ok, I stopped being lazy so here is the recipe. I kinda fucked it up this first time when I made it and ended up making a huge batch, hence why I froze some of it. Some of the amounts listed are good estimates so adjust to taste and amount. I’m also assuming you have already washed your ingredients.

Here is the basic soup part of it.

1 quart chicken broth
1 cup of coconut milk (Goya is my fav)
2-3 large bell peppers (any color)
1 sweet or white onion
1-2 large sweet potatoes
1 decent size bag of Bean sprouts (2.5 cups?)(optional)
2 tbsp garlic minced
3 tbsp jamaican curry powder (I use Badia brand)
*½ teaspoon scorpion pepper sauce or puree (optional)
2-3 bay leaves (optional)
2-3 tbsp salt (or to taste, just make sure to add some early on)
1-2 whole slices of lime
Oil of your choice (I used coconut oil; don’t use olive oil)

Prep:
First, in a decent size saucepan or pot get the chicken broth up to a boil. You can use store bought broth, bullion cube, better than bullion, or half a packet of instant ramen chicken powder. Also add in the coconut milk.

Add in bay leaves if you have it and the minced garlic; a few sliced whole cloves will also work.

Take your onion and cut it in half, then cut those halfs again so you end up with four quarters. Slice the quarters as thick or thin as you want; I personally like the vary my cuts. Add most of them into the pot, reserving some for later.

Let the pot come to a boil then bring the heat down to a simmer. If you leave it on boil you’ll bring out the bitterness from the herbs. (You can apply this logic when making Chai at home)

While you keep on eye on the pot, start choppin up the other ingredients.

Take one sweet potato and nuke it on potato setting. Don’t let it cook all the way. The point is to just soften it up so it’s easier to cut. Do a test cut by cutting off one of the pointed ends. If you can cut it without much trouble they are good; do so while holding them down with a folded paper towel so you don’t burn yourself. Do the same treatment to the other potato if you have it. Let them sit to the side to cool for a bit.

Cut you bell peppers so you end up with circular rings, and discard the top part. You don’t want them too thin, but not too wide, but lean thicker. When you get to the butt part, chop it up into decent size chunks; don’t let shit go to waste. Take the bell pepper rings and cut them in half. You can cut some of the halfs again so there is some variance.

Now is time to cut the sweet potatoes. You want to be able to hold them down as you cut without burning your hand. Cut it so you end up with fairly thick circular slices. BE CAREFUL NOT TO CUT YOURSELF. Once you have done this cut up the circular disks into chunks by halving the disks twice.

Cooking:
Now we can start putting stuff in the pot, but since I consider this a special soup I’m going to first stir fry the veggies to bring them into flavortown.

Before we start put whatever hot sauce you want in the pot. Better to heir on the side of cation and use less than you think you need.

Put a tablespoon of whatever oil you choose into a large pan and bring up to heat. Don’t set the temp too high go for a medium. You don’t want to burn the oil. Once it has heated up a bit put in the bell peppers and sprinkle with a little bit of salt. Now you don’t want to cook them so they get mushy and it’s better to under cook them a little bit since it’s going into the pot. You just want to get them roasted a bit. Once they are done put them into the pot.

That is the base of the stew. You can let it cool and portion it into small freezer bags to save for later. Whatever you do though, PUT THE PORTIONED FREEZER BAGS INTO TRIPLED LAYERED PLASTIC GROCERY BAGS. This is incase the portion bags leak and you don’t have to try to clean curry out of your freezer. When you want some put the frozen portion into a pot with a then add a thin layer of water with the stove on high heat. Once it is defrosted let it come to a good boil then turn down the heat to medium. Add in whatever meat you want. In this case I added 5 uncooked frozen shrimp. I also cracked in an egg for more protein. Give it about 3-4 minutes; you can turn the heat up a bit if you want. Once the shrimp are cooked and the egg is poached so the yolk will still be a little gooey take off the heat and CAREFULLY pour into a bowl. You can add your preferred carb be it rice, noodles, or cauliflower rice if your that anon.

*Note on hot sauce: this is purely up to the cook and you can not add any. I’m a spice fiend and I had some scorpion pepper paste puree around so I added it. Other peppers or sauces that would work well is habanero, and scotch bonnets. Sriracha will also work and will be the least hot of those and add a nice sweetness.

Quick Story: The first time I made this I didn’t have enough better than bouillon paste so I used a couple packets of instant chicken ramen powder. Shit completely overtook the curry flavor. Had to add the whole can of coconut milk and twice the amount of water. Be Careful if you use ramen packet.

Now do the same thing for the potatoes; oil if needed. You kinda want them roasted like your making hash so they get browned a little. Once that is done, throw them into the pot.

If you like bean sprouts like me, you are going to quickly saute them in the pan as well. I added a little bit of soy sauce, but you can use salt or fish sauce if you have it. Once sauteed, add to the pot.

Now if you want extra flavor points, do a couple ladles of the broth from the pot into the pan. BE CAREFUL! Mind the heat of the pan and the amount of oil; otherwise it will pop and spit at you. Once you have gotten some of the juices and oil from the pan, pour it into the pot

Stewing:
Taste test the soup for saltiness; don’t be a dumbass and burn your tongue. Add salt as needed. Also add more curry powder if you want, but in small increments. Now turn the heat up and bring it back up to a bubbling boil. Then turn back down to a simmer. You can cover the pot if you want. Add in any remaining cut up onion. Let it stew for 15-20 minutes or till veggies are to desired tenderness. IMPORTANT: add the lime disk slices into the pot for 5 minutes. Do not add them beforehand. If you put them in too soon they can make the stew bitter and unpalatable. Squeeze the lime slices against the pot to get out all the juices, then remove them when you are done. Try to fish out the bay leaves if you want, just know they are in there.

It consists of black beans, sliced sweet onion, chopped Bell peppers, lime slice, and minced garlic sauteed in olive oil, with dashes of Badia fajita spice, Chile powder, oregano, and just a smidge of cumin.

Cheese sauce is made with a nugget of Colby jack I had left, pinch of corn starch, and dash of milk to lube. Melted it down a bit and added a dollop of low-fat Greek yogurt to thicken it up. Put it on top of the taco, then added some Deltaco meduim sauce on top and a sprinkle of chile powder for aesthetic. Kinda wish I salted to cheeses sauce more though.

Tonight I make lemon pepper chicken soup. Been craving greens so I'm going to put some kale in. You need:

Quarter sweet onion
Full slice of lemon
EGG
Chicken broth
1 Leg & thigh lemon pepper rotisserie chicken
Black pepper

Fill a small pot half way with water to add bullion to or chicken broth.

Rip up and separate the chicken from bone and add to pot. MAKE SURE TO ADD THE SKIN! You want that in there from the start; it's going to add lots of oil and flavor.

Slice your onion into sightly thick cut going down the length. Add 3/4ths of the onion to the pot, reserving the rest for later. Add in a couple pinches back pepper.

Bring the pot to a rolling boil. Then turn down to medium heat and cover. Let it bubble bubble toil and trouble for 8 minuets.

In the past couple of months I finally worked up the courage to start working with sourdough. Did my own starter from scratch, and then tried to make baguettes. The first batch was already good but not great. This is now the 4th batch and - irregular shape aside - I feel I've improved to the point where these are better than the majority of commercial ones, and even most small artisenal bakeries. I'll keep on making them. Practice makes perfect, after all.

I started out by mixing whole wheat flour and water in a 1:1 ratio (about 100g each). Every day I added the same amount, and then when I had enough I started tossing some out before adding more. Leave in an unsealed container at room temp between feedings (I left the lid slightly ajar). Within about 10 days it was all bubbly and frothy and smelled like yogurt. From that point on, simply feed and discard as needed, and keep in a sealed container in the fridge. When in the fridge you should only need to feed it about once a week. I try to feed it the day before using it for baking. When it was active I also started feeding it regular all-purpose white flour instead of whole wheat, so gradually the whole wheat content has dropped to almost zero. Whole wheat seems to be better for growing the starter and keeping it lively, but for baguettes a white flour based starter is better.

I know, that's part of the reason I decided to start with them. I like diving in and challenging myself, and then practicing to perfection. I did the same for pizza and it took me a good 6 months of making pizza every other week to finally get it down to a level where I was happy with it. I expect baguettes will take about as long. Afterwards, I'll probably move on to mixed-flour sourdough loaves, the tangy kind. I've always liked those. I've made one attempt at one and the flavor and texture were okay, but I didn't use a high enough gluten content flour and made it too high-hydration so the bread couldn't hold its shape and fell in the oven. Another lesson learned.

I did. I used a method I'd found online. Basically, soak some kitchen towels in boiling hot water, microwave them a couple of minutes, and put them into the oven a couple of racks lower than what you're baking. Works like a charm, and seems much more effective than a spreay bottle.
