Cast Iron Pans are a meme, they weigh like 50 pounds, it doesn't heat evenly, and you need to season it everytime you use it just so it can nonstick and doesn't build up rust. They are only good because you can pass it down generations but this isn't the 1800s anymore.

Cast iron pans can be bought at basically any weight you want and they aren't that heavy. I've never had a problem with even heating although I'm on induction (came with house) but when I had gas it was pretty much the same. And no you don't have to season it every time. It depends on what you're fucking cooking. Yes, I can cook pretty much anything I want in my cast iron. No, it doesn't stick. Yes, cleanup is rock simple. No, I don't season it more than a few times a year, or if I leave food in it overnight (like if I make a curry or something, and I know I'm just going to heat it up again the next day).

Sometimes it gets a little rough if I mistreat it, but it's idiotproof to get it back to normal again.

I don't understand why anyone would ever want a nonstick for any reason, but I do understand the value of a good stainless pan, which I also use occasionally.

It's unbelievably simple to do one-pan meals with a cast iron, because you can hop it between oven and stovetop as needed.

If you can't lift it with your baby arms, you need to cook more. I refuse to believe any chef anywhere can't move one around comfortably.

I don't really care about passing it onto my grandkids or anything -- I bought it rusted to hell at a thrift shop for like $5, cleaned it up and seasoned it, and I've used it almost every single day since with zero issues.

It's not a meme, it heats fine on an electric stovetop, and unless you go out of your way to fuck it up, it's not going to rust. If it does, you just clean it and it's good to go again.

It's more non-stick. I think on average they should be cheaper as well since there's no Al or Cu core. But honestly both carbon and stainless pans are buy once, use for life so it's only a one-off cost anyway.

I find carbon steel better for stir-frying which I do a lot. Less need to wait for things to release, and creating a fond is not required for that style of cooking. Also I live in Japan and stainless steel pans are just not a thing here so I picked up a carbon steel pan and now I love it.

I like the weight so I can get my lifts in all the time. Also it depends on what you cook. I love making cornbread in it, shepards pie, and cobbler. It's great for things you start on the stove and finish in the oven because you don't have to transfer anything and don't lose heat.

Carbon steel comes in multiple thicknesses. 3mm has is closer weight to your standard/lighter-end cast iron at ~4-4.5lbs (~5lbs for a standard cast iron_ for a 10in, but 2mm thick pans can go for half that weight, or even lighter depending on the form factor.
