Don't do it, Camembert recipes are all memes. Just eat it as is with a little bread and a glass of wine. It should be served at room temperature and a little runny, let it mature a few days to go full Camembert. Then again, I doubt you got the real kind made with actual raw milk.

I actually did something similar with a piece of hard sheep's sirene I didn't really like. Wrapped it tightly in a plastic bag and left it in my fridge for almost a month. It turned nice and gooey. The smell could kill a dog from 20 paces, but the taste was great.
Though that should only be done to heavily salted cheeses, otherwise it's mold and botulism paradise.

Yeah I can see that in the south. I'm positive Camembert is sold in most Stop N Shop (New England), Big Y (New England), Sprouts (West & SW), Vons (SW), Albertsons (SW), and Smith's (SW) stores. Not to say you can't find some of those stores in different regions. I just labeled them based on where I've lived. If there is Whole Foods anywhere near you, it's worth the visit for the cheese alone based on my experience living in Las Vegas. Whole Foods is out of the way for me though, so I'm not going all the way down there for just cheese unless I have an insatiable craving or want to impress company.

My ex got me into cheese. We gradually moved up to the different more expensive cheeses and there was a noticeable difference as the price went up.

But the fancy crackers and breads and such did not really improve with price. I like to switch it up every now and then but Ritz is still my goto no matter the cheese.
