Because they mostly disagree with how a lot of animals are treated and want others to stop supporting it. Just keeping it to themselves won't help the animals.

Although a lot of the time it ends up having the opposite effect as they can come off as irrational and fanatical, but some of them have good intentions. The ones who don't try to say their choices are for health reasons are usually a little more rational since we clearly aren't herbivores. But I think the development of lab-grown meat and better alternatives will do more to help animals than becoming more and more fanatical in your veganism.

Most people don't want to actively lower their quality of life for the environment, especially when stuff like that only affects poorer people. It's always hilarious to see some wealthy person constantly flying around in a huge plane and then telling poor people to stop eating meat because of the environment.

The same way that lab-grown meat might be able to help with some of those issues, there's already a lot of technology being developed to help keep the environment clean too. It's expensive and not going to be finished tomorrow but there are things being developed to help clean the air, remove plastic from the oceans, etc.

I have one vegan friend who isn't insufferable. We were out eating one time and they accidentally put meat in her dish, and instead of freaking out, she just gave it to me. If we're hanging out and we cook, she's fine with eating vegetarian instead of vegan, because I can cook a portion of food without meat, but fuck trying to cook without butter or eggs.
