depends on how you like your yolk. poaching is basically soft boiled without the shell. heat ur water, vortex or not(doesnt effect much aside from presentation), once it turns white around the yolk gently move it around with the back of a spoon until its as soft or dense as you like.

i eat a lot of fried egg sammiches, so crack 2 into a small pan with about a teaspoon of butter over medium low and pop the white and yolk sacks and move them around the pan until its one whole piece and then flip that bitch with the flick of my wrist, salt and pepper, slice of americana cheese, take off heat and let it rest for a few minutes while I dress my white bread with some mayo, a few dashes of tabascer and eat it all in less time than it took to make.

I always give mine a spoonful of water and 15s or so with the lid on to steam the tops and finish up any runny white... but yeah, sunny side up usually. Soft boiled, smashed on buttered toast is also pretty gosh darned delicious... and omelettes are just always a good time.
