Hey, it's me. San Francisco garlic noodles historically sprung up in the areas around Chinatown and Little Italy in SF, because they're right next to each other. The recipe is fucking so simple, and tastes fucking awesome. It's usually served with chili crab or salt and pepper crab, or salt and pepper shrimp or chili shrimp:
It's basically this:
>bring water to boil, and cook 1 lb either spaghetti, linguini, or fresh asian noodles
>in a bowl, combine 1 tablespoon Maggi or Knorr "Seasoning Sauce" (don't skip it), 1 tablespoon oyster sauce, 1 tablespoon fish sauce, and 2 teaspoons coconut or brown sugar
>meanwhile, melt around 4-6 tablespoons butter in a small pan and add 2 tablespoons minced garlic. Let the garlic slowly simmer in the butter, don't let it brown. Once the garlic is cooked and fragrant, add your combined sauces
>drain noodles (reserve a bit of the pasta water)
>mix the noodles with the garlic butter-sauce mixture and toss the pasta well over low heat.
>finally, add a couple tablespoons of grated parmesan cheese (this is crucial) and just a bit of the pasta water and toss well

I like a tomato soup. Had this today with some leftover veggies I had in the fridge. Vegan here, so cheeseless is my thing. I usually try to put a lot of flavor into the sauce. Tons of herbs and spices. Caraway and/or anise perk it up a lot imo (anise is more pricey than caraway though)

Nutritional yeast is great for a flavor substitute, but be sure to put it on AFTER cooking. Roasted yeast also tastes good, but if a cheesy taste is what you're going for, put it on after.

I've never tried it, but supposedly blended up potatoes + carrots + nutritional yeast and some spices make a good cheese sauce you could use, though I've mostly heard it be used for nachos.

You could always skip the substitute entirely and just load it up with a ton of veggies, which is my usual go-to with it and even my non-veg family and friends love it.

If I had to start over, I'd get a rice cooker, a 4 quart pot, universal steaming basket, a small cutting board and Chef's knife, and a 9-10" cast iron skillet. I'd use the pot as a bowl (for soaking beans overnight, for example).

It's really all you need. You could ditch the steaming basket and rice cooker, but I really, really like setting the timer on my rice cooker and coming home to freshly-cooked rice. All I've got to do when I come home is put some vegetables in the steamer and sear a piece of meat. Dinner is done in like 20 minutes with clean-up -- tops. I don't care how poor I was, I would put back $5/month for a rice cooker for a year. It's just too nice to have. Now if I couldn't even afford $1/month to put away, then yeah, I wouldn't bother with it. I'd get another 4 quart pot. But rice cookers without timers can be had for <$20. On Black Friday, you can get one for $10. And Tiger makes a good Zojirushi alternative that's in the $60 range and $5/month would get you there eventually. The Tiger has a steaming basket up top so that will save you from having to buy a separate one.
