Tomatoes canned, whole.
Cook down until mush, add some sugar, salt, mix, and serve aside.

Heat some olive oil, crush fresh garlic, finely chop fresh oregano, cook in olive oil until aromatic, add tomato sauce back in bit of water, some chili flakes, bundle of bay, basil, sage, simmer for about 30 minutes, taste for good balance of sweet and salty.
Hate when pizza sauce is to tart or sour from the tomatoes. Doesnt go to well with the richness of say sausage or something as a topping.

I know a lot of top end pizza places just use extremely ripe tomatoes, blanch, peel, and crush then cook down with salt, sugar, and basil, done.

I made some more sauce with store-brand tomatoes that costed less than half as much, and it came out bland as fuck. I made a really basic sauce with just onions, garlic, and anchovy. The San Marzanos were much more flavorful. I put a ton of San Marzano sauce on my pasta when I served it because it was so delicious. The other sauce was weird.
