Love ya and your posts mate. If I may offer some advise on your next blt adventure. I am of the opinion that the BLT is the GOAT sandwich. I think if you use thinner bread, or maybe core it a little bit, and double or even triple the tomato you added (seasoned of course) and go a little lighter on the lettuce you're going to have a real good time. Aside from that if you went a little crispier on the bacon I think that would help too. Good shit with the top and bottom mayo, that's a veteran move. Also, it looks like that bread may not be toasted and if that's the case that's a rookie mistake. Remember BLTs are simple so ratio is important. Doesn't look bad or anything but wanted to fill you in on BLT pro tips.

Tonight I baked salmon that was marinated in soy, honey, garlic, and ginger. I topped it with a mixture of bread crumbs, cheese, lemon, onion, garlic, and mushrooms then topped it off with bread crumbs, salt, and pepper for some crisp. I sauteed sugar snap peas in butter then tossed them in the same sauce as the marinade but added some sesame oil and chili oil. I toasted up some sourdough garlic bread and accompanied the meal with some Argentinian white wine. I made rice pudding for dessert. It's a pork roulade. Usually used as a bread topper here but it works just fine for something like this.
I removed half the liquid in the pot and froze it for later. Made gravy from the rest.
The reserved liquid can be used as a base for a vegetable stew or a stew make with lean mean, like those really cheap porkchops they have at the store.

"Rullepoelse" is usually either ribroast or belly. Basically the same cut as porchetta. As you might be able to tell, the stuffing goes kinda heavy on the black pepper, but when you cook a nice big piece of meat like that for hours you do need a lot of seasoning. It's not a particularly "hot" sort of dish.
It's much more traditionally simmered in water by itself and cut into slices to put on openfaced sangewedges, but I like it just fine as a potroast.
