You want to make anything with meat, first you add butter or "oil" like you assholes call it then fine diced onion until the malliard effect browns it entirely. Then you add a roast, or whatever beef mess you want to make. For flavour. You fry that thing entirely until is brown and cooked. THEN you leave the pan dripping to either cornstarch and water or flour mixture to deglaze the gravy. Then you add water flour or cornstarch and reduce it to gravy. There are 12 other ways to do this but I simplified it.

I have no idea if it's real and if so why it happened, but it could be something like the food industry suddenly discovering they could replace most butter with palm oil. One company starts replacing butter with palm oil and doesn't get punished for it and they suddenly all do it. Now they have a much cheaper fat to work with, so they just stuff more in.
