PBJ sandwich is delicious with a cold glass of milk.

Other than that, I cook with it occasionally to make a thai dipping sauce for BBQ grilled chicken or steak skewers (aka "satay" sauce). My favorite use is when I am cooking an Italian dinner, and intentionally cook the entire pound of dried pasta to plan ahead a cold salad for the next day. Ziti rigate is ideal for it but any pasta works.
To hot pan saute some carrot shreds, bell pepper, red onion, remove from heat and black sesame seeds, garlic, and return to heat to slightly toast the seeds, remove from heat again and stir in ginger paste, chili paste,curry powder and a couple of giant dollops of crunchy peanut butter. Stir into warm ingredients in pan, adding soy sauce, sesame oil, lime juice and lime zest to taste. Balance the lime (or rice vinegar) tartness with some brown sugar OR hot mango chutney or tropical fruit jam (I like guava, tamarind or mango). Combine with drained and cooled pasta and refrigerate overnight. Stir in cilantro and diced cucumber before serving, and possibly some cold leftover chicken to make it a main. Coconut flavor also works, if you have some squeezeable coconut cream. It's not worth opening a whole can for it, though. Lemongrass comes in a tube in my grocery, and also good as an added flavor, but not required. You can repurpose fancy cole slaw mix into the cold salad too, the cabbages and carrots are nice, even the kind with brussels and kale added. Simple or complex as you want it. It's also the only time I will prefer whole wheat high fiber pasta, a cold salad hides the mealiness, and it goes nicely with peanuts.

They're eaten as a snack. They come in many different varieties. They come with or without a shell. They can be seasoned with salt or numerous different seasonings. I like chili lime. There's "blister peanuts" that are extra-crunchy. Japanese peanuts have a crunchy, slightly sweet coating. There's "honey-roasted" that are basically just coated in sugar. Peanut butter is delicious on toast. It also goes well with jam or honey.
