I do not live in Humbolt, and merely got that piece of cheese(going for $29/pound) at a market in Columbus, Ohio. It’s indoor, and they let you buy booze and drink it inside. That cheese and apple was eaten on a park bench with my wife, holding hands, drinking rosé, and soaking up some summer sun. I do love blue, though, and am always looking for cheese recommendations.

Yeah that sounds more like it. I swear there isn't a single place worthwhile eating at in from Fortuna on South or East, and that it's really hit or miss the more North you go. Sure you have a couple places that might be okay to perhaps exceptional to eat at but all of them have a real chance of seeing some bum's spread bum against the restaurant window as a chocolate colored smear radiates outward against the glass. Also, I heard that one of the dipshit managers at Humboldt creamery was fired for being an alcoholic, so that place is probably a shit show too.

I live in Arcata where a new $10 burger place and $3 taco place opens up every month. So many bums on the plaza that the cops can't ticket them away fast enough. Hole in the Wall Sandwiches is an oasis in a county-wide culinary desert. A town where the only good thing to eat is a ham and swiss on white bread.

Humboldt Creamery is still pretty based though after all the drama. Best whole milk you can get without paying $9 a gallon for Starus Farms. Cottage cheese, sour cream and everything else they make is all incredibly based. Just put some of their sour cream on my shchi and I felt the first tinge of happiness in weeks. Hang in there anon. We'll all make it out of this place.

Gouda or edamer, for sandwiches which is where I most often use cheese. But with a folded omelette I prefer aged cheddar or some harder cheese that'll cut through the richness. I tried yellow american once, it actually increased the richness and even made it a little sweet, not my cup of tea.
