However, something interestin from that video is if you vacuum seal one of those dishwasher safe bags and put your steak in it, chuck it in the dishwasher for a cycle, it comes out like sous vide and all you have to do is sear it on the outside for a crust.

Season the steak. And fry it in a pan to get some colour on it and some colour into the pan. Don't cook through tho.

Add onions, garlic and carrots to the pan and cook them off.

Add some tomato paste reintroduce the steak then add some water/red wine and/or chicken stock/beef stock. Add some herbs of your choosing.

Turn the heat down and let it cook until the steak is done.

I don't know if steak is the right cut for something like this

It’s a waste but it won’t taste like shit.

Take a high pan and add olive oil, fry some onions and adjust with salt/pepper.

Meanwhile using a new pan quickly sear the steak and throw it in the other pan with onion soffritto then cover everything in tomato sauce and some beef stock. A tablespoon of concentrated tomatoes if you want, then slowly bring it to a boil with very low gas.

Cover the pan and let it simmer for at least 1.30 hours checking that the sauce is not retiring too much. If it happens add other tomato sauce/stock.

If everything has been done correctly now your steak should be disintegrated and the fat rendered into the sauce.

Let everything rest and boil some pasta like

>pipe rigate
>orecchiette

Once cooked throw the water away and mix them with the sauce for some beef ragù.

Well then, it's not a steak cut. Steak cuts should be cooked using dry heat because they don't need a long simmering to become tender. That would be like calling oxtails, beef shanks or chuck roasts steaks.
