How do people manage to use a shit ton of oil without having the dish dissolve into a homogenous fat-flavored mess? Something as simple as a burger is a fantastic example. The onions just absorb the oil and become sweet. The buns absorb the oil and become soggy and greasy. Even with mushrooms the flavor is lost and replaced by the oil. I just don't know how to assemble all these without having the individual ingredients lose their flavor or integrity.

Every restaurant I've worked at we deep fried our bacon. Saves stove space and gives you quick and uniformly cooked strip.
unless you're cooking your burger on a grill (which is probably going to be sprayed down or rubbed with some sort of grease on occasion) oil is kind of necessary for a burger. the oil prevents it from getting nasty black char before enough fat renders off in the pan. It only takes like a teaspoon. Never worked at a restaurant where any meat went into a pan totally dry.

Get a better pan then and cook with gas. I’ve never, ever added any kind of fat to my pan when cooking meat. Never. Lean meat, fat meat, whatever. If you’re having to add fat to cook it you’re either using the wrong utensil or the wrong stove. Applies to all meat, no exceptions. Best steaks I turn fat down side to start and it starts to produce a cooking fat within a minute then I flip side on. Perfect steaks every time.

A school dining hall that I worked at also deep fried the bacon. If you cook a lot of bacon in a pan the large amount of rendered fat covers the bacon anyway. It's not much different from putting the bacon in a fryer, and the fryer is more efficient for pushing out mass quantities. A culinary event I participated in for school (a different one) recently baked the bacon on sheet pans, but they didn't have to feed that many people. It was a 20-25 person event.
