So what I did was use an improvised version of Chinese mung bean cake. And pressed it out with a moon cake mold. Also it has blueberry jam filling.

It's entirely made of green beans with jam filling. Boiled fresh whole green beans 3 times then blended with sugar. Took wierd baby food style paste into and strained some of the water out. Then put the bean goop into a large sauce pan on low heat with butter and a bit of milk. I also added a cap of vanilla extract.
Cook paste on low heat until water evaporates. Should look like refried beans. Once it's real doughy cover and put in fridge. Put in moon cake mold and layer with jelly.
