Paper can work. You need it for a sticky dough, if its very hydrated. You can't transfer properly otherwise. You would have to use cornmeal or flour, and it wont work well.

But listen to me. I stretch and toss directly on the hot steel. Then top the pizza in less than fifteen seconds, then back into the oven for full blast.
