Buy some sweet onions then. In Europe it’s Oignon doux des Cévennes from France and in US it’s the Vidalia onions. They are low in sulfur so the don’t have that “bite”. If you can’t find those onions, buy red ones, sloce them and pour some red wine vinegar/lemon juice over them. It will make them mild.
