Cinnicinati does chili differently. When I was learning about such things, I heard it was related to Greek immigrants who used their favorite spices when making the meat mixture, and it borrows heavily from the meat filling that is in Pastitsio, the Greek version of a homey and creamy casserole of baked Lasagna (sort of). It's got the cinnamon, in other words, and it's very grainy and fine mince. Sometimes it borrows the oregano, thyme and other not-chili-herbs. Cinnamon and chocolate works with chili, mind you, it's excellent in mexican mole and I love it there.

I don't dislike skyline and the like, and I'd eat it if served, but would not make a special trip. I don't crave it like people who grew up having the coney, or the Cinncinati 5 way chili, or even supposed soul food style (it's greek style) Ben's Chili Bowl in DC...all have that something extra from the cook that I don't crave.

Any day though, I'll have a grilled foot long all beef hot dog in a soft bun or a griddled top split bun, with chunky beany chili and minced purple onion on top, maybe a few drops of mustard underneath if that's their way, and I wouldn't pass up good aged cheddar, either. You can get versions of that all over the country, from fast food drive throughs, to diners, to good chili loving restaurants. But, if there's a hint of cinnamon, ehh, whatever on that. Cheap preshredded processed mild cheese that doesn't melt readily it's the old way, sorry, kind of like the cheez whiz on an authentic philly. I kind of want it more homemade or elevated, you know? Yes, that's traditional, but is it really for modern tastes? someone make it better now.
