Why did western knives settle on double bevel? After using a single bevel nip knife I can't see why anyone would want a double bevel. Single bevel seems to be easier to sharpen and makes a nice precise cut edge.

I've watched videos of nips cutting up fish and i'm not sure what you mean by they shave the fish. Aside from descaling it they seem to use the same tools westerners do for cutting the fish up into chucks of sellable goods. Especially tuna, maybe it's different for smaller fish.

i have a theory that this stems from the type of lumber and access to it westerners typically have harder wood than eastern society's and much more of it so they kept their knives more like axes because everyone used axes and knew how to take care of it because wood was so plentiful. meanwhile in eastern culture wood was a sign of luxury and they developed an intricate style of joinery that required precise chiseling of soft woods more suited to a single edge

it might be more related to the west valuing strength and durability paramount to precision like in in eastern culture.
