Hi /ck/
Big thing in Brazil is to put cream cheese on pizza
What's your opinion?

Pizza here is usually thin crust with a thin layer of mozzarella

Pretty good. If they called it something other than pizza, like the Germans do with flammkuchen, no one would have a problem with it. Just pretentious Italians being pedantic as usual.

It's probably good. I usually like pizza with alfredo sauce more than tomato sauce, you'll find that more often than cream cheese with pizza. I think I've only seen cream cheese pizza once and it had smoked salmon on it too, kind of like how it gets served on a bagel sometimes.

They put an imitation in most places.

That being said, I had a zucchini pizza with cream cheese which was delicious.

i've always thought of the idea of having a cream cheese layer on lasagna, if it works on pizza, maybe i'll try it some time later

I assume it just makes it creamier? Shouldn't impact the flavor at all. Here in Croatia the most popular variety of pizza is mixed: tomato sauce, cheap cheese and processed ham. Optional mushrooms and olives. You end up with a hearty meal that's not at all light.

I'm not a big fan of cream cheese on pizza. It's cloying and the creaminess would be better suited with ricotta. In the United States, there's a lot of regional varieties. Connecticut is most famous for a white pizza with garlic and clams I suppose. It's pretty good though.

we italian instead of cream would use a creamy cheese like stracchino, which acidity is more suitable for pizza
also i have the impression that brazilian dairy products are something anyone from countries with a cheese tradition would find abhorrent, i don't think the climate is good to make all things right without "ultrapastorizing" the fuck out of everything

do italians really put lemon on their pizza?

we put lemon on top of many things but not pizza, maybe some "gourmet" pizza put lemon zest

You're correct
We use low-moisture mozzarella for pizza
Milky cheese like ricota and and cottage must be kept in the fridge or else it goes bad really fast

This is the only acceptable combination of toppings.
