It's an overly heavy hunk of black shit, modern ones aren't even smooth finish so they can't build a coating properly. unless you can get your hands on an heirloom pan it's a waste of time and a meme. About the only positive I can think of is that they can go straight from the stove to the oven, but honestly you're better off getting a dutch oven or similar for that

Ok, so maybe I stay with my non stick pan for now...

>> No.13773568

>>13773533
the main positive of cast iron cookware is its heat retention
meaning the temp of the pan doesn't quickly change.
if you put cold food in it, the temp won't sharply drop like in other cookware
you can cook things at high temp more easily
you can get good colouring on food before it overcooks

>> No.13773848

>>13773568
so does cast iron pan give a good crust because of it retaining high temp or because the meat stick on the pan because of the metal itself?

>> No.13774690

>>13773516
you can use brutal heat and yet they are indestructible and will easily outlast you and your grandchildren. A well seasoned cast iron pan is just as non stick as a teflon pan, but a teflon pan is better suited to braising and simmering stuff. OTOH a stainless ssteel pan can do that too and will outalst a non stick pan any day.

because it reatins heat so well (because of its mass) and also because the black cast iron emits much more infrared radiation than non stick or stainless.
