Deep saute pan or Dutchy
2ishcups white wine
Couple tablespoons butter
As much garlic as you like -- couple cloves, chopped roughly
One or two diced tomatoes
As much cayenne as you like
Salt and pepper

Get the mix to a boil, add the clams in bunches, cook until they open, plus 30-40 seconds. Enjoy with charcuterie, breads, etc.

Simple dish I like;

Saute onion and garlic in butter
Add sliced chorizo
Add clams/mussels, cover with white wine
Bring to boil then simmer until the shells are open (10-15min)
Discard any closed shellfish
Add Cream
Eat with crusty bread

Picrelated, mussels steamed which is a good option if you just want them open ready to go in a dish
