It's not terrible when I make it with hummus. I imagine that it wouldn't be horrible with certain pestos as well, but with any tomato sauce it is too off for me. I'm half italian though so I'm constantly trying to get over my pasta pretension.

Our whole family switched to it because of a doctor recommendation to one family member regarding triglyceride levels. I accidentally bought regular pasta one day instead and we ate it and I found I strongly preferred the whole wheat pasta.

It's the only pasta I eat, none of that brown rice quinoa shit. Floured rice seems to spike my blood sugar much more than wheat. But I rarely eat pasta because whole hard red wheat bread is much better.

Soba is good too, but usually structurally reinforced with white flour (of wheat)

I cook it for what the box says, then turn off the heat and let it sit in the water until the bran is softened. Usually takes 2x as long as cook time. So if the pasta box says to cook for 10 minutes, I do that then let it sit in the water with the heat off for 20 minutes after. It doesn't get mushy because the bran keeps absorbing more water and it's not all going to the starch. It probably depends on the brand though, some brands might use wheat that's ground more finely and it won't take as long to soften.

It's only high glycemic when floured, for me, much moreso than even white flour (of wheat. I can't say "white wheat flour" because there are varieties of wheat known as white, so one could think I mean whole white wheat. They're less tasty and less glutinous.)

The more you know: Plenty parts of Italy that didn't have the same access to wheat as, say Campania, have traditional pastas made with chestnut, potato, whole grain flour or other things nowadays considered "exotic" and not true pasta.

I eat whole grain and chestnut trofie every week pretty much.
