If at home, I'll sometimes nuke a hot dog for 40 seconds, slop some mustard on it, and wrap it up in a piece of white bread and eat it as a drunk move to just get some food in me. But if I want to enjoy a dog or go out and buy one, I'm a coney guy, sorry OP. Chili, mustard, onions...and served with chili cheese fries. The Chicago dog interests me, but I'm not gonna bother until I go to Chicago, not gonna try to emulate it, more fun to have something on my to do list.

If it's a good dog, I get where you are coming from, though I think you can go with a couple toppings. Generally hot dogs really only get improved by sauerkraut or mustard, and onions, from my experience. I personally go for sauerkraut and raw onion. Mustard if sauerkraut isn't available.

Man there used to be a German deli in my neighborhood when I was younger and it had the best fucking coleslaw and german style potato salad (vinegar based, only other ingredients are onions and bacon). I've never had coleslaw as good as that ever since then. I used to cover my hot dogs with it and even put it on burgers with some swiss cheese, it was glorious.
