also fat has a lot of uses, depends on what cut of meat you're using. If i'm cooking a rump steak, for example, i'll trim off 70% of the fat or so and save that for when i'm making pan sauce to serve with it. Part of the problem a lot of people have is that they don't get their pans hot enough and cook their meat when it's wet. scoring fat also helps the rendering
