my mom makes farinata sometimes, it's ok, but like other stuff made from chickpeas it's pretty dry. kinda along the same line, pane panelle is also made from chickpeas and its pretty dry too especially since you eat it as a fucking sandwich. they add lemon to it to compensate a bit.

>make dough from water, flour, oil and salt
>roll dough into thin circles
>add filling on one half
>fold over
>fry for 2-3 minutes on each side
filling is traditionally mashed potatoes or raw spring onion and coriander but you can use any veggie you want
