I tried pho for the first time not too long ago. Because of the flu season I had to pick it up. They gave me the bowl and the broth in separate containers. The noodles were stuck together in a lump at the bottom, inseparable. I scooped up spoonfuls of noodles like I was scooping ice cream. It was actually quite good.
One thing to note is that if you refrigerate pho for a second time, make sure not to mix the broth with the bowl, because the broth will become murky. When I reheated it, it was edible, but rather disgusting.

This desu, it's also easy to fuck up too, really. I've had some really good ramen, and some really shitty ramen at the same exact place.

That being said if you find a good ramen place run by koreans or actual japs it's usually pretty consistently quality in my experiences. The best ramen I've ever had was at a ramen place run by koreans immigrants and they played jpop on the radio. But I've never been to Japan or anything so take that with a grain of salt.

Conversely my worst ramen experience was at a local hipster chain called Crane Ramen. It was good the first couple times I went and then I went like a year later that that and it was pretty booty.

I've never tried ramen. From my experiences as a half-vietnamese, I can tell that the taste of pho is actually quite weak, mainly because it is a breakfast food. You don't want to start your day with something heavy.
I'd say that a more savory soup like bun bo would be a better comparison for ramen.
For someone that wants to try a soup with a more delicate(ie. less) flavor than pho, bun rieu basically tastes like diluted tomato soup. Somehow chinese people often prefer that over pho.

I like about a handful of beansprouts, a few leaves of basil, chili paste (the place near me has a darker chili paste that i don't know what it is but I do add a little bit of it), and then a squeeze of lime.

Adding to this, I loved ramen a lot for a while because I would eat it at this place owned by a lone Japanese guy who came to the country specifically to open a ramen place. It was pretty expensive but absolutely fantastic. Now I recently had ramen at a place owned by Chinese people and it was terrible. I've had instant ramen that tasted better.
