This stuff is shit. Don't buy it. It used to be that folks would make their own kvass, just from stale, leftover bread bits. Bakeries would, also, often make it with unsold bread, then sell that, as well. It was delicious.

Then, the Soviets came around and fucked it all up. Small bakeries were replaced by government-owned bread factories which gave up quality in favor of quantity. I order to make kvass in mass quantities, the opted for a combination of bread crumbs, sugar syrups, and added carbonation, since that was easier to make and keep than true, fermented kvass. That crap is the continuation of Soviet-era food crimes. If you're interested, kvass can be made in about three days, in your kitchen, with just bread, yeast, water, sugar/honey, raisins, and some cheese cloth to filter out crumbs, at the end.

The tarragon soda doesn't taste like mouthwash. It's called Tarkhun and it's pretty good. Kvas is also alright, but it's a bit of an acquired taste. Baikal is probably the closest the Soviets got to Coke or Pepsi and is also a classic.

Ideally, you'd use rye bread (preferably a darker rye), since that's more traditional. It was originally made by people living fairly far north, during a period when global temperature averages were lower than today's, so they could really only grow rye, successfully. Still that's not to say that some folks might have had other breads and made kvass with it, from time to time, and other bread would work. I've been interested in experimenting with other breads, but have just never gotten around to it. I'd say to try rye, first, but to experiment, if you'd like (or if you just can't get or don't like rye). Other breads might not be traditional, but that doesn't mean that they wouldn't make tasty kvass.
